Smoke often gets a bad rap, but for celebrated chef Josh Boutwood, it’s a muse. Known for his precision-driven approach to layering flavors that linger long after the last bite, Boutwood has built a reputation for his creativity at restaurants like HELM, his 24-seat gastronomic theater, where he blurs the lines between food and art.

A Boutwood dinner invites diners into an immersive experience that is as much about storytelling as it is about taste. An unforgettable evening awaited legal-age guests for a special IQOS x HELM six-course tasting dinner, where every dish mirrored the essence of curiosity.

A Menu Inspired by Discovery

The meticulously curated six-course menu was designed to pique the curiosity of the legal-age attendees. With his minimalist yet experimental culinary philosophy, Boutwood created dishes that played with contrast and told a story in every bite.

It started with fresh tuna marinated in soy and aged miso, a dish that balanced umami depth with a light, clean finish. This was followed by organic egg with sweet shrimp, where the creamy richness of the egg was elevated by the subtle sweetness of the seafood, bursting with a harmony of flavors.

The third course—halibut paired with celeriac purée and celery leaves—showcased Boutwood’s knack for amplifying an ingredient’s natural taste profile, echoing the sensory experience of a cooling sensation. The highlight of the evening came with Australian wagyu, paired with fermented vegetable paste and Ättika gel, a daring composition of textures and bold flavors.

Where Gastronomy Meets Craftsmanship

Boutwood’s exquisite dishes were not limited to taste; it was an exploration of the senses. At the event, still-life photographer Sara Erasmo captured the intricate details of the menu, creating sensual representations of the dishes that mirrored the craftsmanship and innovation. Her work was displayed throughout HELM, adding another layer to the evening’s atmosphere.

Legal age guests were also treated to a carefully curated package from IQOS and HELM, allowing them to continue their exploration of curiosity and innovation beyond the dinner table. The collaboration exemplified how creativity, whether through culinary art or smoke-free technology, can elevate even the most mundane experiences.

The launch at HELM stands as a testament to the transformative power of innovation, a central theme in IQOS’s “Stay Curious”* campaign. Chef Josh Boutwood’s mastery in translating the product’s tropical freshness into a multisensory dining adventure demonstrated that boundaries can always be pushed — in flavor, form, and technology alike.
