The Philippine culinary scene is rapidly evolving as a new wave of chefs reshape the identity of Filipino cuisine and set the stage for the arrival of the Michelin Guide in the country. To give a closer look at this exciting transformation, multi-awarded chef Josh Boutwood will join other influential industry leaders for a discussion at Rolling Stone Philippines LIVE! on Friday, March 21.
The list of accolades, restaurants, and experimental dishes tied to Boutwood’s name is long and ever-growing. Having grown up working as a dishwasher and prep cook in his mother’s restaurants in Spain and Boracay, Boutwood’s journey into the culinary world seemed almost like a birthright. At only 22, he ambitiously opened his first restaurant Alchemy, where he crafted precise, experimental Spanish dishes for Filipino appetites. From there, he assumed the role of corporate executive chef for food and beverage conglomerate The Bistro Group, where he oversees more than a hundred restaurants.
Boutwood has since opened a string of restaurants that are committed to providing guests with experimental, intimate dining experiences. The Test Kitchen, which Boutwood opened in 2017, offers minimalistic dishes that highlight the pure flavors of locally sourced ingredients. His 24-seat restaurant Helm takes minimalism one step further, with its simple tasting menu creating a unique, one-on-one experience that connects the kitchen directly with guests. Boutwood’s latest venture, Juniper, takes inspiration from the juniper berry, the essence of a classic gin and tonic. The menu emphasizes the power of a single ingredient, showcasing its versatility in every dish.
