On Friday, March 21, Rolling Stone Philippines will bring together the country’s most forward-thinking and Filipino-first chefs and restauranteurs for a panel discussion titled, “Understanding the Filipino Palate: A Conversation with Top Names in the F&B Industry,” with none other than Erwan Heussaff leading the conversation.
In 2021, the chef and content creator rebranded his social media channels to FEATR under his production company, The Fat Kid Inside Studios. His work covers a wide range of subjects surrounding food all over the country — from catching and cooking eels, to setting up a steakhouse business with his brother-in-law Nico Bolzico.
Through the FEATR YouTube channel and his personal social media channels, Heussaff has shown a dedication to stories on food, travel, and culture, spotlighting aspects of and practices in Filipino foodways that are in danger of obsolescence.
Heussaff’s work earned him a prestigious James Beard Award in 2023 for the social media category. In his acceptance speech, he said that Filipinos are most present in food and beverage industries all over the world. “Everyone says [Filipino food] is the next big thing, and I’m obsessed with figuring out how to make it just a big thing,” he said.
Now, Heussaff takes the Rolling Stone Philippines LIVE! stage with Chef Bruce Ricketts, restauranteur Jae De Veyra Pickrell, Chef Miko Calo, and Chef Josh Boutwood. Together, they will talk about trends in the local F&B industry and what it takes for Filipino cuisine to become a major force in the global food industry.
